Zesty Avocado Lime Shrimp Bites

Ingredients

1 lb large shrimp, peeled and deveined
2 ripe avocados, peeled and mashed
1/4 cup fresh lime juice
1/4 cup cilantro, chopped
1/2 tsp garlic powder
1/2 tsp cumin
Salt and pepper to taste
24 small tortilla chips
1 jalapeño, sliced for garnish

Instructions

1. In a medium bowl, combine the mashed avocado, lime juice, cilantro, garlic powder, cumin, salt, and pepper.
2. Stir until well mixed and creamy.
3. Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes per side, until pink and opaque.
4. Place a spoonful of the avocado mixture on each tortilla chip.
5. Top with a cooked shrimp and a slice of jalapeño.

Storage

Store any leftover avocado mixture in an airtight container in the refrigerator for up to 1 day. Shrimp should be consumed fresh.
