Zesty Apple Coleslaw

Ingredients
2 cups shredded green cabbage
1 cup shredded purple cabbage
2 green apples, julienned
1/2 cup shredded carrots
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1/2 cup mayonnaise
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a large mixing bowl, combine green cabbage, purple cabbage, green apples, carrots, cilantro, and green onions.
2. In a separate small bowl, whisk together mayonnaise, lime juice, honey, Dijon mustard, salt, and pepper.
3. Pour the dressing over the cabbage mixture and toss until well coated.
4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
5. Before serving, toss the coleslaw once more and garnish with additional cilantro if desired.
Storage
Store leftover coleslaw in an airtight container in the refrigerator for up to 3 days.
Reheating
This coleslaw is best served cold and does not require reheating.
