Ingredients

4 pieces flatbread
1/4 cup olive oil
3 tbsp za’atar spice mix
8 oz crumbled feta cheese
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
2 tbsp pine nuts
1 tbsp lemon juice
Salt and pepper to taste

Instructions

1. Preheat oven to 400°F.
2. Brush flatbreads with olive oil and sprinkle evenly with za’atar spice mix.
3. Scatter crumbled feta cheese over the flatbreads.
4. Arrange cherry tomatoes, red onion, and kalamata olives on top.
5. Bake in the preheated oven for 10-12 minutes until flatbreads are golden and crispy.
6. Remove from oven and sprinkle with fresh parsley, pine nuts, and a drizzle of lemon juice.
7. Season with salt and pepper to taste before serving.
