Vibrant Mediterranean Pasta Salad

A delightful twist on traditional pasta salad, this Mediterranean version is packed with fresh vegetables, tangy feta, and robust herbs, making it a perfect dish for summer gatherings or a healthy weeknight meal.

Ingredients

8 oz fusilli pasta
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/4 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup extra-virgin olive oil
2 tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried oregano
Salt and pepper to taste

Instructions

1. Cook the fusilli pasta according to package instructions until al dente. Drain and let cool.
2. In a large bowl, combine cherry tomatoes, cucumber, olives, red onion, and feta cheese.
3. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
5. Toss gently to combine, then sprinkle with fresh parsley and basil before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Enjoy cold or let sit at room temperature for 15 minutes before serving.
