Veggie and Hummus Cups

Ingredients

1 cup baby carrots, sliced
1 cup cucumber sticks
1 cup red bell pepper strips
1 cup yellow bell pepper strips
1 cup cherry tomatoes, halved
1 cup broccoli florets
1 cup prepared hummus
1 teaspoon paprika
1 tablespoon olive oil
,6 small plastic cups
6 small wooden skewers

Instructions

1. Prepare all vegetables by washing them thoroughly and slicing as needed.
2. Fill each small cup with an assortment of sliced carrots, cucumber sticks, bell pepper strips, cherry tomato halves, and broccoli florets.
3. In a small bowl, mix prepared hummus with paprika and olive oil for added flavor.
4. Pour a small portion of the hummus mixture into the center of each cup.
5. Insert a wooden skewer into each cup, threading through some of the vegetables for easy handling.
6. Serve immediately or cover and refrigerate until serving.

Storage

Store covered in the refrigerator for up to 2 days.

Reheating

Best served fresh, does not require reheating.
