Vegetarian Tamale Pie

A modern twist on the traditional tamale pie, this vegetarian version is packed with vibrant flavors and hearty textures. Perfect for a weeknight dinner or a party, it combines a zesty filling with a golden cornbread topping.

Ingredients

1 tablespoon olive oil
1 large onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
1 jalapeño, seeded and chopped
1 cup corn kernels, fresh or frozen
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup shredded cheddar cheese
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
2 large eggs
1/4 cup melted butter

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
3. Add the red bell pepper and jalapeño, cooking for another 3-4 minutes until softened.
4. Stir in the corn, black beans, diced tomatoes, cumin, and chili powder. Season with salt and pepper. Simmer for 5-7 minutes.
5. Transfer the mixture to a greased 9x13 inch baking dish and spread evenly. Sprinkle cheddar cheese over the top.
6. In a bowl, whisk together cornmeal, flour, baking powder, and salt. In another bowl, mix milk, eggs, and melted butter.
7. Combine wet and dry ingredients, stirring until smooth. Pour the batter over the vegetable mixture.
8. Bake in the preheated oven for 25-30 minutes or until the cornbread topping is golden and a toothpick inserted comes out clean.
9. Let cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 350°F (175°C), place the tamale pie in an oven-safe dish, and cover with foil. Reheat for 15-20 minutes or until heated through.
