Vegan Caesar Salad

Ingredients

1 head romaine lettuce, chopped
1 cup croutons
2 tablespoons capers
1 cup cashews, soaked
1/4 cup water
2 tablespoons lemon juice
2 tablespoons nutritional yeast
1 tablespoon Dijon mustard
1 clove garlic
1 tablespoon olive oil
Salt and pepper to taste

Instructions

1. For the dressing, blend soaked cashews, water, lemon juice, nutritional yeast, Dijon mustard, garlic, and olive oil until smooth.
2. Season dressing with salt and pepper to taste.
3. In a large bowl, toss the chopped romaine with the dressing until evenly coated.
