Ingredients

1 tbsp olive oil
14 oz firm tofu, crumbled
1/2 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 cup canned black beans, drained and rinsed
1 avocado, sliced
1/4 cup nutritional yeast
4 large flour tortillas
1/4 cup salsa
1/4 cup fresh cilantro, chopped

Instructions

1. Heat olive oil in a skillet over medium heat.
2. Add crumbled tofu, turmeric, garlic powder, onion powder, salt, and pepper. Cook until the tofu is heated through and slightly golden, about 5 minutes.
3. Stir in black beans and cook for another 2 minutes.
4. Warm the tortillas in a separate pan.
5. Assemble the burrito by layering tofu scramble, avocado slices, nutritional yeast, and salsa on each tortilla.
6. Sprinkle with cilantro, roll the burritos, and serve warm.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat in a skillet over medium heat until warmed through, or microwave for about 1 minute.
