Ube Pandesal

Ube Pandesal is a delightful Filipino bread that captivates with its vibrant purple hue and sweet, creamy ube (purple yam) filling. This irresistible treat is soft and fluffy on the outside with a unique slightly sweet flavor that makes it both a breakfast favorite and an exciting snack.

Ingredients

3 cups all-purpose flour
1/4 cup sugar
1/2 tsp salt
2 1/4 tsp active dry yeast
1 cup warm milk
2 tbsp unsalted butter, melted
1 large egg
1 cup ube halaya (purple yam jam)
1/2 cup breadcrumbs

Instructions

1. In a large bowl, combine flour, sugar, and salt.
2. In a small bowl, dissolve yeast in warm milk and let it sit for 5-10 minutes until frothy.
3. Add the melted butter and egg to the yeast mixture, then gradually add to the dry ingredients, mixing until a dough forms.
4. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
5. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
6. Punch down the dough and divide into 12 equal portions.
7. Flatten each portion, place a tablespoon of ube halaya in the center, and seal to form a ball.
8. Roll each ball gently in breadcrumbs and place on a baking tray lined with parchment paper.
9. Cover and let rise again for 30 minutes.
10. Preheat oven to 350°F (175°C).
11. Bake the pandesal for 18-20 minutes or until lightly golden.
12. Remove from oven and cool slightly before serving.

Storage

Store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week.

Reheating

Reheat in a 300°F oven for about 5 minutes or until warm.
