Tuscan Sun-Dried Tomato Pesto Pasta

Ingredients

12 oz spaghetti
1 cup sun-dried tomatoes in oil, drained
1/2 cup Parmesan cheese, grated
1/4 cup pine nuts
2 cloves garlic, minced
1 cup fresh basil leaves
1/2 cup olive oil
Salt and pepper to taste
1/4 cup fresh parsley, chopped, for garnish

Instructions

1. Cook the spaghetti according to package instructions until al dente, then drain and set aside.
2. In a food processor, combine the sun-dried tomatoes, Parmesan cheese, pine nuts, garlic, and basil leaves.
3. Pulse until the mixture is well blended.
4. With the processor running, slowly drizzle in the olive oil until the pesto is smooth and creamy.
5. Season with salt and pepper to taste.
6. Toss the cooked spaghetti with the pesto until well coated.
7. Serve with a sprinkle of fresh parsley.

Storage
