Ingredients
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 celery stalks, diced
1 can (15 oz) cannellini beans, drained and rinsed
1 can (15 oz) diced tomatoes
4 cups chicken broth
1 cup ditalini pasta
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are tender, about 5-7 minutes.
3. Stir in cannellini beans and diced tomatoes.
4. Pour in chicken broth and bring to a gentle boil.
5. Add ditalini pasta, oregano, basil, salt, and pepper.
6. Reduce heat and simmer until pasta is al dente, about 10 minutes.
7. Serve hot with a sprinkle of Parmesan cheese and fresh parsley.
