Ingredients
1 cup old-fashioned rolled oats
1 cup coconut milk
1 tbsp chia seeds
1 tsp ground turmeric
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1 tbsp maple syrup
1/4 cup chopped nuts (such as almonds or walnuts)
1/2 cup mixed berries (such as blueberries and raspberries)
Instructions
1. In a medium-sized bowl, combine the oats, coconut milk, chia seeds, ground turmeric, ground cinnamon, and ground ginger.
2. Stir in the maple syrup until thoroughly mixed.
3. Cover the bowl and refrigerate overnight or for at least 6 hours.
4. In the morning, give the oats a good stir and divide into serving bowls.
5. Top with chopped nuts and mixed berries before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Overnight oats can be eaten cold straight from the fridge or warmed slightly in the microwave for 30-45 seconds, stirring halfway through.
