Truffle Mashed Potatoes

Ingredients

4 lbs Yukon Gold potatoes
1 cup heavy cream
1/2 cup unsalted butter
1/4 cup truffle oil
2 tsp salt
1 tsp black pepper
2 tbsp chopped fresh chives

Instructions

1. Peel and cube the potatoes, then place them in a large pot.
2. Cover potatoes with cold water and add a pinch of salt. Bring to a boil over medium-high heat.
3. Reduce heat to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
4. Drain the potatoes and return them to the pot.
5. In a small saucepan, heat the heavy cream and butter over low heat until the butter is melted.
6. Pour the cream and butter mixture over the potatoes.
7. Mash the potatoes with a potato masher until smooth.
8. Stir in the truffle oil, salt, and black pepper.
9. Garnish with chopped fresh chives before serving.

Storage

Store leftover mashed potatoes in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place mashed potatoes in a covered microwave-safe dish and heat on medium power, stirring every minute until hot, or reheat gently on the stove over low heat, stirring occasionally.
