Truffle Infused Mashed Potatoes

Ingredients
4 lbs Yukon Gold potatoes, peeled and cubed
1 cup heavy cream
4 tbsp unsalted butter
1.5 tsp truffle oil
Salt to taste
Black pepper to taste
Fresh chives for garnish (optional)
Instructions
1. Boil the cubed potatoes in a large pot of salted water until fork-tender, about 20 minutes.
2. Drain the potatoes and return them to the pot.
3. Add the heavy cream and butter to the pot and mash the potatoes until smooth.
4. Stir in truffle oil, salt, and pepper.
5. Adjust seasoning to taste and garnish with fresh chives if desired.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat or in the microwave, adding a splash of cream if needed to reach desired consistency.
