Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
1/4 cup fresh lemon juice (about 1 large lemon)
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1 tablespoon truffle oil
1/2 teaspoon ground cumin
Salt to taste
2-4 tablespoons water (as needed)
Instructions
1. Combine the chickpeas, tahini, lemon juice, and garlic in a food processor. Blend until smooth.
2. With the processor running, slowly add the olive oil and truffle oil. Continue blending until fully incorporated and the mixture is creamy.
3. Add the cumin and salt to taste. Blend again.
4. Gradually add water, one tablespoon at a time, until the hummus reaches your desired consistency.
5. Transfer the hummus to a serving bowl and drizzle with a little extra truffle oil if desired.
Storage
Store the hummus in an airtight container in the refrigerator for up to 5 days.
Reheating
Hummus is best enjoyed cold or at room temperature, so there is no need for reheating. If you prefer it warm, gently heat in a microwave-safe bowl for about 10-15 seconds.
