Ingredients

1 lb pork tenderloin, cut into 1-inch cubes
1 cup pineapple chunks
1/2 cup coconut milk
1/4 cup rice vinegar
1/4 cup brown sugar
2 tbsp soy sauce
1 tbsp cornstarch
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 tbsp ginger, minced
1/4 cup green onions, chopped
1/2 tsp salt
1/4 tsp black pepper
2 tbsp vegetable oil

Instructions

1. In a bowl, combine cornstarch, salt, and black pepper. Add pork cubes and toss to coat evenly.
2. Heat vegetable oil in a large pan over medium-high heat. Add pork and cook until browned, about 5-7 minutes. Remove and set aside.
3. In the same pan, add garlic and ginger, sautéing for 1 minute until fragrant.
4. Add red and green bell peppers, stir-frying until slightly tender, about 3-4 minutes.
5. Stir in pineapple chunks, soy sauce, rice vinegar, and brown sugar. Bring to a simmer.
6. Return pork to the pan, stirring to coat with the sauce. Cook for another 3-4 minutes.
7. Reduce heat to low, add coconut milk, and stir to combine. Simmer for 2 minutes.
8. Garnish with green onions before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat, adding a splash of water to maintain moisture, until heated through, about 5 minutes.
