Ingredients

1 can (20 oz) pineapple chunks, drained
1 cup sharp cheddar cheese, grated
1/2 cup Parmesan cheese, grated
1/2 cup all-purpose flour
1 cup coconut flakes
1 sleeve (about 35) butter crackers, crushed
1/2 cup unsalted butter, melted
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp salt

Instructions

1. Preheat the oven to 350°F.
2. In a large bowl, combine the drained pineapple chunks, sharp cheddar cheese, and Parmesan cheese.
3. In a separate bowl, mix together the flour, brown sugar, ground cinnamon, nutmeg, and salt.
4. Add the dry mixture to the pineapple and cheese mixture, tossing gently to coat.
5. Transfer the mixture to a greased 9-inch square baking dish.
6. In a medium bowl, combine the crushed butter crackers and coconut flakes.
7. Drizzle the melted butter over the cracker mixture and toss until evenly coated.
8. Spread the cracker and coconut mixture evenly over the pineapple and cheese mixture.
9. Bake in the preheated oven for 30 minutes, or until the top is golden brown and bubbly.
10. Let cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place in a preheated oven at 325°F for 10-15 minutes or until heated through.
