Ingredients
8 oz tortilla chips
1 cup diced ripe mango
1 cup diced avocado
1/2 cup black beans, rinsed and drained
1/4 cup finely chopped red onion
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
1 jalapeño, thinly sliced
1 lime, cut into wedges
Salt and pepper to taste
Instructions
1. Preheat your oven to 350°F (175°C).
2. Spread the tortilla chips evenly on a large baking sheet.
3. Sprinkle the shredded Monterey Jack cheese over the chips.
4. Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
5. Meanwhile, in a medium bowl, combine the mango, avocado, black beans, red onion, and cilantro. Season with salt and pepper to taste.
6. Remove the baking sheet from the oven and evenly distribute the mango-avocado mixture over the nachos.
