Tropical Finger Jello Delight

Ingredients

3 cups water
1 cup pineapple juice
1 cup mango juice
1/2 cup coconut milk
4 packets unflavored gelatin
1/2 cup granulated sugar
1/4 cup shredded coconut (optional)

Instructions

1. In a saucepan, bring 2 cups of water to a simmer.
2. Slowly stir in the unflavored gelatin until completely dissolved.
3. Add the sugar, stirring until fully dissolved.
4. Remove from heat and stir in remaining water, pineapple juice, mango juice, and coconut milk.
5. Pour the mixture into a 9x13 inch baking dish.
6. Refrigerate for at least 4 hours, or until set.
7. Once set, cut into squares or fun shapes.
8. Optionally, sprinkle shredded coconut on top before serving.

Storage

Store in an airtight container in the refrigerator for up to 5 days.
