Ingredients

1 cup all-purpose flour
1/2 cup coconut flour
1/4 cup granulated sugar
1/2 tsp baking powder
1/4 cup cold unsalted butter, cubed
1/4 cup coconut oil, solid
1 large egg
1/2 tsp vanilla extract
1 cup Greek yogurt
2 tbsp honey
1 lime, zested and juiced
1/4 cup shredded coconut
1/2 cup sliced kiwi
1/2 cup mango chunks
1/2 cup pineapple chunks
1/4 cup pomegranate seeds
Fresh mint leaves for garnish

Instructions

1. Preheat the oven to 350°F (175°C).
2. In a bowl, combine all-purpose flour, coconut flour, sugar, and baking powder.
3. Cut in butter and coconut oil until the mixture resembles coarse crumbs.
4. Add the egg and vanilla extract; mix until a dough forms.
5. Press the dough into a 12-inch pizza pan.
6. Bake for 15-18 minutes or until golden brown. Let it cool.
7. In a small bowl, mix Greek yogurt, honey, lime zest, and lime juice.
8. Spread the yogurt mixture over the cooled crust.
9. Top with kiwi, mango, pineapple, and pomegranate seeds.
10. Garnish with shredded coconut and fresh mint leaves.
