Traditional Slow-Cooked Beef Roast

Ingredients
3 lbs beef chuck roast
1 tbsp olive oil
1 large onion, sliced
4 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
4 large carrots, peeled and cut into chunks
3 large potatoes, peeled and cut into chunks
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
2. Transfer the roast to the slow cooker.
3. In the same skillet, add onions and garlic, sauté until onions are translucent. Transfer to the slow cooker.
4. Add beef broth, red wine, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper to the slow cooker.
5. Add carrots and potatoes around the roast.
6. Cover and cook on low for 8 to 10 hours, or until the meat is tender and shreds easily with a fork.
7. Remove the bay leaf before serving. Adjust seasoning, if necessary.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a microwave or in a pot over low heat until warmed through.
