Ingredients

4 large eggs
1 lb pork sausage meat
1/2 cup all-purpose flour
1 cup breadcrumbs
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp ground nutmeg
1/4 tsp cayenne pepper
Vegetable oil for frying

Instructions

1. Place eggs in a pot of boiling water and cook for 6 minutes. Transfer to ice water to cool, then peel.
2. In a bowl, mix sausage meat with salt, pepper, nutmeg, and cayenne pepper.
3. Divide sausage mixture into four portions and flatten each into a patty.
4. Wrap each egg with a sausage patty, sealing completely.
5. Dredge each sausage-wrapped egg in flour, dip in beaten egg, and coat with breadcrumbs.
6. Heat oil in a deep fryer or pan to 350°F and fry eggs until golden brown, about 5-6 minutes.
7. Drain on paper towels before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 10-12 minutes until heated through.
