Traditional Roast Pork Loin

Ingredients

3 lbs pork loin
2 tbsp olive oil
1 tbsp salt
1 tsp black pepper
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 cup chicken broth
1 lemon, juiced

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a small bowl, mix olive oil, salt, pepper, minced garlic, rosemary, and thyme.
3. Rub the herb mixture evenly over the pork loin.
4. Place the pork loin in a roasting pan and pour chicken broth and lemon juice around it.
5. Roast in the preheated oven for approximately 90 minutes, or until the internal temperature reaches 145°F (63°C).
6. Let the pork rest for 10 minutes before slicing and serving.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in a preheated oven at 325°F (160°C) for about 15 minutes, or until warmed through.
