Traditional Roast Loin of Pork

Ingredients
4 lbs pork loin
2 tbsp olive oil
1 tbsp sea salt
1 tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp garlic, minced
1 cup chicken broth
1/2 cup white wine
1 tbsp Dijon mustard
Instructions
1. Preheat your oven to 375°F (190°C).
2. Rub the pork loin with olive oil, salt, pepper, rosemary, and garlic.
3. Place the pork loin in a roasting pan and pour chicken broth and white wine around it.
4. Roast in the preheated oven for approximately 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C).
5. Remove from oven, cover with foil, and let rest for 15 minutes.
6. Slice and serve with a drizzle of pan juices.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 325°F (163°C), place sliced pork in a baking dish with a splash of broth, cover, and heat for 10-15 minutes.
