Traditional Pumpkin Bars

Ingredients

1 cup all-purpose flour
1 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
2 large eggs
1 cup canned pumpkin puree
1/2 cup vegetable oil
1 tsp vanilla extract
1/2 cup chopped walnuts (optional)
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
3. In a large bowl, beat together eggs, pumpkin puree, vegetable oil, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in chopped walnuts, if using.
6. Pour the batter into the prepared baking dish and spread evenly.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow to cool completely before frosting.
9. To make the frosting, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
10. Spread the frosting over the cooled pumpkin bars and cut into squares for serving.

Storage

Store any leftover pumpkin bars in an airtight container in the refrigerator for up to 5 days.

Reheating

To reheat, allow the bars to come to room temperature or warm gently in the microwave for 10-15 seconds.
