Traditional Peanut Brittle Delight

Ingredients

1 cup granulated sugar
1/2 cup light corn syrup
1 cup roasted salted peanuts
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Instructions

1. Grease a baking sheet or line with parchment paper and set aside.
2. In a large microwave-safe bowl, combine sugar and corn syrup, stirring until mixture is smooth.
3. Microwave on high for 4 minutes, then stir in the peanuts.
4. Microwave for an additional 3 minutes.
5. Add butter and vanilla extract, stirring until butter is melted.
6. Microwave for 1 more minute.
7. Quickly stir in baking soda until the mixture is light and foamy.
8. Immediately pour the mixture onto the prepared baking sheet, spreading evenly.
9. Allow to cool completely, then break into pieces.

Storage

Store the peanut brittle in an airtight container at room temperature for up to 2 weeks.

Reheating

To restore the crispiness, place pieces on a baking sheet and warm in a 350°F oven for 5 minutes.
