Traditional Oven Roast

Ingredients

4 lbs beef chuck roast
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
4 cloves garlic, minced
2 cups beef broth
1 cup red wine
1 lb carrots, peeled and cut into chunks
1 lb potatoes, quartered
2 onions, cut into wedges

Instructions

1. Preheat your oven to 350°F (175°C).
2. Season the beef roast with salt, pepper, thyme, and rosemary.
3. Heat olive oil in a large oven-proof pot over medium-high heat.
4. Sear the roast on all sides until browned.
5. Remove the meat and sauté garlic in the pot.
6. Add beef broth and red wine, scraping up browned bits.
7. Return the roast to the pot and surround with carrots, potatoes, and onions.
8. Cover with a lid and transfer to the preheated oven.
9. Roast for 3 hours or until the beef is tender.
10. Let rest for 10 minutes before slicing and serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 325°F until warmed through, or microwave individual portions on medium power.
