Ingredients
2 tablespoons vegetable oil
1 cup long-grain white rice
2 cups chicken broth
1/2 cup tomato sauce
1 small onion, finely chopped
1 clove garlic, minced
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 cup fresh cilantro, chopped
Instructions
1. Heat vegetable oil in a large skillet over medium heat.
2. Add rice and cook, stirring frequently, until lightly golden brown.
3. Stir in onion and garlic, and cook until onion is translucent.
4. Add chicken broth, tomato sauce, cumin, salt, and chili powder.
5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until liquid is absorbed.
6. Fluff rice with a fork and stir in fresh cilantro before serving.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a microwave-safe dish for 2-3 minutes or until heated through. Alternatively, reheat on the stove with a splash of water over low heat.
