Traditional Mexican Beef Casserole

Ingredients

1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1 cup frozen corn
8 oz tortilla chips, crushed
2 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro, for garnish

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon.
3. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
4. Stir in the cumin, chili powder, smoked paprika, salt, and black pepper, mixing well.
5. Add the black beans, diced tomatoes with green chilies, and frozen corn, stirring to combine.
6. Transfer the beef mixture to a greased 9x13-inch casserole dish.
7. Sprinkle the crushed tortilla chips evenly over the beef mixture.
8. Top with the shredded cheddar cheese.
9. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
10. Garnish with chopped cilantro before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through.
