Traditional Japanese Ramen Soup

Ingredients
1 lb pork shoulder
2 eggs
4 cups chicken broth
2 cups water
3 oz dried ramen noodles
1/4 cup soy sauce
2 tbsp miso paste
2 tbsp vegetable oil
4 cloves garlic, minced
1 inch ginger, grated
2 green onions, sliced
1 cup bean sprouts
1 sheet nori, cut into strips
1/2 cup bamboo shoots
1 tbsp sesame seeds
Salt to taste
Pepper to taste
Instructions
1. Heat vegetable oil in a large pot over medium heat. Add pork shoulder and sear until browned on all sides.
2. Remove pork and set aside. In the same pot, add garlic and ginger, sauté until fragrant.
3. Pour in chicken broth and water, and stir in soy sauce and miso paste. Bring to a simmer.
4. Return pork to the pot, cover, and cook for 1.5 hours until tender.
5. In a separate pot, boil eggs for 7 minutes, then transfer to an ice bath. Peel and slice in half.
6. Cook ramen noodles according to package instructions. Drain and set aside.
7. Remove pork from the broth and slice thinly.
8. To assemble, divide noodles among bowls, ladle hot broth over, and top with sliced pork, eggs, bean sprouts, bamboo shoots, green onions, nori strips, and sesame seeds.
9. Season with salt and pepper to taste.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, warm the soup gently in a saucepan over medium heat until hot.
