Traditional Homestyle Chicken Casserole

Ingredients
2 tbsp butter
1 medium onion, chopped
2 cloves garlic, minced
1 cup carrots, sliced
1 cup celery, sliced
1/2 cup peas
3 cups cooked chicken, shredded
1 can (10.5 oz) condensed cream of chicken soup
1 cup chicken broth
1/2 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried parsley
2 cups cooked egg noodles
1 cup cheddar cheese, shredded
1/2 cup breadcrumbs
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large skillet over medium heat, melt the butter.
3. Add the chopped onion and garlic, sauté until softened.
4. Stir in the sliced carrots, celery, and peas, cook for 5 minutes.
5. In a large bowl, combine the cooked chicken, cream of chicken soup, chicken broth, and milk.
6. Season with salt, pepper, thyme, and parsley, and mix well.
7. Stir in the sautéed vegetables and cooked egg noodles until combined.
8. Transfer the mixture into a greased 9x13 inch baking dish.
9. Sprinkle the shredded cheddar cheese on top.
10. In a small bowl, mix breadcrumbs with a little melted butter and sprinkle over the cheese.
11. Bake in the preheated oven for 30 minutes or until bubbly and golden brown on top.
12. Let cool for a few minutes before serving.
Storage
Store leftover casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the casserole in an oven-safe dish and warm in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through.
