Ingredients
1 cup honey
3/4 cup packed brown sugar
1 large egg
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground nutmeg
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup chopped almonds
1/4 cup chopped candied citron
1/4 cup chopped candied orange peel
1/4 cup milk
1 tablespoon lemon juice
Confectioners’ sugar for dusting
Instructions
1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a saucepan, heat honey and brown sugar over medium heat until the sugar dissolves. Allow the mixture to cool slightly.
3. Beat in the egg and spices until well combined.
4. In another bowl, mix flour and baking soda, then add to the honey mixture, stirring to form a soft dough.
5. Fold in almonds, candied citron, and orange peel.
6. Roll dough into small balls and place on prepared baking sheets.
7. Flatten each ball slightly and bake for 12-15 minutes or until golden.
8. Allow cookies to cool on wire racks.
9. Mix milk and lemon juice, then brush over cooled cookies and dust with confectioners’ sugar.
Storage
Store in an airtight container at room temperature for up to 2 weeks.
Reheating
Reheat in a 300°F oven for 5 minutes to restore softness.
