Traditional French Beignets

Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon salt
1 packet (1/4 ounce) active dry yeast
3/4 cup warm water (110°F)
1/4 cup evaporated milk
1 large egg, beaten
2 tablespoons unsalted butter, melted
Vegetable oil for frying
Powdered sugar for dusting
Instructions
1. In a small bowl, dissolve yeast in warm water and let stand for 10 minutes.
2. In a large bowl, combine flour, sugar, and salt.
3. Stir in the yeast mixture, evaporated milk, egg, and melted butter to form a soft dough.
4. Knead the dough on a lightly floured surface until smooth and elastic, about 8 minutes.
5. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 2 hours.
6. Roll out the dough to 1/4-inch thickness and cut into 2-inch squares.
7. Heat oil in a deep fryer or large pot to 370°F (188°C).
8. Fry dough squares in batches until golden brown, turning once, 2-3 minutes per side.
9. Remove beignets with a slotted spoon and drain on paper towels.
10. Dust generously with powdered sugar before serving.
Storage
Store in an airtight container at room temperature for up to 2 days.
Reheating
Reheat in a 350°F (175°C) oven for 5 minutes or until warm.
