Ingredients

2 cups fresh blueberries
1 tablespoon lemon juice
1 cup granulated sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup whole milk
1 teaspoon vanilla extract
1 tablespoon turbinado sugar (optional)

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a medium bowl, gently toss the blueberries with lemon juice and 1/2 cup of granulated sugar. Set aside.
3. In another bowl, whisk together the flour, baking powder, and salt. Pour in melted butter, milk, and vanilla extract, stirring until just combined.
4. Pour the batter into a greased 9-inch square baking dish.
5. Evenly distribute the blueberry mixture over the batter. Sprinkle with the remaining 1/2 cup of granulated sugar and turbinado sugar if using.
6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the edges are bubbly.
7. Allow to cool slightly before serving.

Storage

Store the cobbler in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days.

Reheating

Reheat individual servings in the microwave for 20-30 seconds or warm the whole cobbler in a 350°F oven for 10-15 minutes.
