Traditional Black Bean Soup

Ingredients

2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
2 (15 oz) cans black beans, drained and rinsed
4 cups chicken broth
1 bay leaf
Salt to taste
Black pepper to taste
2 tbsp lime juice
1/4 cup chopped cilantro
Sour cream for garnish (optional)
Avocado slices for garnish (optional)

Instructions

1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and sauté until translucent, about 5 minutes.
3. Stir in the minced garlic, ground cumin, smoked paprika, and cayenne pepper, and cook for another 1 minute.
4. Add the drained black beans, chicken broth, bay leaf, salt, and black pepper.
5. Bring to a boil, then reduce heat and let it simmer uncovered for about 30 minutes, stirring occasionally.
6. Remove the bay leaf, and use an immersion blender to partially puree the soup to your desired consistency.
7. Stir in lime juice and chopped cilantro.
8. Serve hot, garnished with sour cream and avocado slices if desired.

Storage

Store the soup in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stove over medium heat, stirring occasionally until heated through.
