Tofu and Vegetable Skewers

These grilled tofu and vegetable skewers offer a perfect blend of smoky and fresh flavors, featuring marinated tofu and vibrant veggies. Ideal for a summer barbecue or a healthy dinner option.

Ingredients

1 block (14 oz) firm tofu, drained and pressed
1 red bell pepper, cut into 1-inch pieces
1 zucchini, sliced into rounds
1 red onion, cut into wedges
1 cup cherry tomatoes
1/4 cup olive oil
2 tbsp lemon juice
1 tbsp dried Italian herbs
2 cloves garlic, minced
Salt and pepper to taste

Instructions

1. In a small bowl, whisk together olive oil, lemon juice, Italian herbs, minced garlic, salt, and pepper.
2. Cut the tofu into 1-inch cubes and place in a shallow dish.
3. Pour the marinade over the tofu, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
4. Preheat a grill to medium-high heat.
5. Thread the marinated tofu, red bell pepper, zucchini, red onion, and cherry tomatoes onto skewers, alternating ingredients.
6. Grill skewers for 10-12 minutes, turning occasionally, until vegetables are tender and tofu is slightly charred.
7. Remove from the grill and serve warm.

Storage

Store leftover skewers in an airtight container in the refrigerator for up to 2 days.

Reheating

To reheat, preheat the grill or oven to 350°F (175°C) and warm the skewers for about 5-7 minutes or until heated through.
