Timeless Macaroni Salad

Ingredients

2 cups elbow macaroni (uncooked)
1 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped celery
1/2 cup diced red bell pepper
1/4 cup chopped green onions
1/4 cup shredded carrot
1/4 cup chopped fresh parsley
2 hard-boiled eggs (chopped)

Instructions

1. Cook the macaroni according to package instructions. Drain and rinse under cold water until cool.
2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
3. Add the cooled macaroni, celery, red bell pepper, green onions, carrot, parsley, and hard-boiled eggs to the bowl with the dressing and stir gently to combine.
4. Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Storage

Store the macaroni salad in an airtight container in the refrigerator for up to 3 days.
