Timeless Apple Pie

Ingredients
2 1/2 cups all-purpose flour
1 tsp salt
1 tsp sugar
1 cup unsalted butter, chilled and diced
6 to 8 tbsp ice water
6 cups thinly sliced apples (Granny Smith)
3/4 cup granulated sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
2 tbsp all-purpose flour
1 egg yolk
1 tbsp milk
Instructions
1. Preheat oven to 425°F (220°C).
2. In a large bowl, combine flour, salt, and sugar.
3. Cut in butter until mixture resembles coarse crumbs.
4. Stir in ice water, a tablespoon at a time, until dough holds together.
5. Divide dough in half, shape into discs, and refrigerate for at least 30 minutes.
6. Roll out one dough disc on a floured surface to fit a 9-inch pie pan. Place it in the pan.
7. In another bowl, toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour.
8. Pour apple mixture into the prepared crust.
9. Roll out the remaining dough and place over the filling. Seal and flute the edges.
10. Whisk egg yolk and milk; brush over crust.
11. Cut slits in the top to allow steam to escape.
12. Bake for 15 minutes in the preheated oven.
13. Reduce temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until apples are soft and the crust is golden brown.
14. Cool on a wire rack before serving.
Storage
Store covered in the refrigerator for up to 4 days.
Reheating
Reheat slices in the oven at 350°F for 10 minutes or until warm.
