Tater Tot Fiesta Casserole
A vibrant twist on the classic tater tot casserole, infused with Mexican-inspired flavors, perfect for a zesty family dinner or a festive gathering. This recipe features a medley of spices layered with seasoned beef, creamy beans, and crunchy tater tots, creating a delightful casserole experience.

Ingredients
1 lb ground beef
1 packet taco seasoning
1/2 cup diced onions
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies, undrained
2 cups shredded cheddar cheese
4 cups frozen tater tots
1/2 cup sliced black olives
1/4 cup chopped fresh cilantro
1/2 cup sour cream
Instructions
1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
2. In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned; drain excess fat.
3. Add the taco seasoning and mix well.
4. Stir in black beans and diced tomatoes with green chilies, then simmer for 5 minutes.
5. Spread the beef mixture evenly in the prepared baking dish.
6. Sprinkle half of the cheddar cheese over the beef mixture.
7. Arrange the tater tots evenly over the cheese layer.
8. Top with the remaining cheddar cheese, sliced black olives, and half of the fresh cilantro.
9. Bake in the preheated oven for 30-35 minutes or until the tater tots are golden brown and crispy.
10. Remove from oven, let cool slightly, and garnish with the remaining cilantro.
11. Serve with sour cream on the side.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F (175°C) and bake for 10-15 minutes or until heated through.
