Ingredients

2 large sweet potatoes, scrubbed and sliced into thin rounds
1 tbsp olive oil
1 tsp salt
1 tsp paprika
1/2 tsp black pepper
1 cup black beans, drained and rinsed
2 jalapeños, sliced
1 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/2 cup guacamole

Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss sweet potato slices in olive oil, salt, paprika, and black pepper until evenly coated.
3. Arrange slices in a single layer on the baking sheet.
4. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
5. Remove from oven and top with black beans, jalapeños, and cheese.
6. Return to oven and bake for an additional 5 minutes, or until cheese is melted.
7. Garnish with chopped cilantro and serve with guacamole.

Storage
