Sweet Potato & Maple Nut Pie

A delightful twist on the classic sweet potato pie, this recipe combines the creamy richness of sweet potatoes with the natural sweetness of maple syrup and the crunch of nuts. Perfect for holiday gatherings or a comforting dessert, this pie is both delicious and easy to make.

Ingredients

2 lbs sweet potatoes
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup maple syrup
1/2 cup whole milk
2 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 pre-made pie crust
1/2 cup chopped pecans
1/4 cup brown sugar
1 tbsp melted butter

Instructions

1. Preheat the oven to 350°F (175°C).
2. Bake or boil the sweet potatoes until tender, about 45 minutes.
3. Let the sweet potatoes cool slightly, then peel and mash them.
4. In a large bowl, combine the mashed sweet potatoes, softened butter, granulated sugar, maple syrup, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
5. Mix until smooth and well combined.
6. Pour the sweet potato mixture into the pre-made pie crust.
7. In a small bowl, mix chopped pecans, brown sugar, and melted butter.
8. Sprinkle the pecan mixture over the top of the pie filling.
9. Bake in the preheated oven for 50-60 minutes, or until a knife inserted in the center comes out clean.
10. Allow the pie to cool completely before serving.

Storage

Store the pie covered in the refrigerator for up to 4 days.

Reheating

Reheat individual slices in the microwave for 20-30 seconds or the entire pie in a 350°F oven for 10-15 minutes.
