Sunset Quinoa Salad

Ingredients
1 cup quinoa
2 cups water
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon red wine vinegar
1 teaspoon sea salt
1/2 teaspoon black pepper
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup kalamata olives, pitted and halved
1/4 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
Instructions
1. Rinse quinoa under cold water and drain.
2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. Remove from heat and let stand for 5 minutes. Fluff with a fork and set aside to cool.
4. In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, sea salt, and black pepper.
5. Add cherry tomatoes, cucumber, red onion, olives, and feta cheese to the dressing; toss to combine.
6. Add cooled quinoa to the bowl and stir until thoroughly mixed.
7. Garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in the microwave if desired, though it is best served cold.
