Ingredients

1 1/4 cups all-purpose flour
1 cup whole wheat flour
1 cup granulated sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup grated carrots
1/2 cup grated apple
3 large eggs
2/3 cup vegetable oil
2 teaspoons vanilla extract
1/4 cup orange juice

Instructions

1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt.
3. Stir in the shredded coconut, walnuts, and raisins until evenly distributed.
4. In another bowl, combine the grated carrots, grated apple, eggs, vegetable oil, vanilla extract, and orange juice.
5. Pour the wet ingredients into the dry ingredients and stir until just combined.
6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Storage

Store the muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Reheating

Reheat muffins in the microwave for 15-20 seconds or in a preheated 300°F (150°C) oven for 5-10 minutes.
