Stuffed Mushrooms with Herbs and Cheese

Ingredients
24 large white mushrooms
8 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 cup breadcrumbs
2 cloves garlic, minced
2 tbsp chopped fresh parsley
1 tbsp chopped fresh chives
1/4 tsp salt
1/4 tsp ground black pepper
2 tbsp olive oil
Instructions
1. Preheat oven to 375°F (190°C).
2. Clean mushrooms with a damp cloth and remove stems, setting the caps aside.
3. Finely chop the mushroom stems and mix them with cream cheese, Parmesan, mozzarella, breadcrumbs, garlic, parsley, chives, salt, and pepper in a bowl.
4. Fill each mushroom cap with the cheese and herb mixture, slightly mounding it.
5. Place filled mushrooms on a baking sheet and drizzle with olive oil.
6. Bake for 20-25 minutes or until the tops are golden and the mushrooms are tender.
7. Serve warm and enjoy.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place in a preheated oven at 350°F (175°C) for about 10 minutes until warmed through.
