Ingredients

2 cups fresh strawberries, hulled and halved
2 cups rhubarb, chopped
1 cup granulated sugar
1/3 cup all-purpose flour
1 teaspoon vanilla extract
1 cup rolled oats
1/2 cup brown sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
1/4 teaspoon salt

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
2. In a large bowl, combine strawberries, rhubarb, granulated sugar, 1/3 cup flour, and vanilla extract. Mix well to coat the fruit evenly.
3. Transfer the fruit mixture to the prepared baking dish, spreading it out evenly.
4. In another bowl, mix oats, brown sugar, 1/2 cup flour, cinnamon, melted butter, and salt until crumbly.
5. Sprinkle the oat mixture evenly over the fruit in the baking dish.
6. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the fruit is bubbly.
7. Let it cool for a few minutes before serving warm.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place desired portion in a preheated oven at 350°F for 10-15 minutes or microwave on low for about 1 minute.
