Stovetop BBQ Pulled Pork

Ingredients

2 lbs pork shoulder
1 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
2 cups BBQ sauce
1 cup chicken broth
2 tbsp apple cider vinegar
1 tbsp brown sugar
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
4 hamburger buns
2 cups coleslaw

Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until onions are translucent.
2. Add pork shoulder to the pot, sear on all sides until browned, about 5 minutes per side.
3. Pour BBQ sauce, chicken broth, apple cider vinegar, and brown sugar over the pork. Stir in smoked paprika, salt, and black pepper.
4. Bring the mixture to a simmer, then cover and reduce heat to low. Let it cook for 2 to 3 hours, or until the pork is tender and easy to shred.
5. Remove pork from the pot and shred with two forks. Return shredded pork to the pot, stir to coat with sauce, and heat through.
6. Serve the pulled pork on hamburger buns topped with coleslaw.

Storage

Store leftover pulled pork in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the pulled pork in a saucepan over low heat until warmed, adding a splash of water or broth if needed.
