Spring Herb Pea Salad

Ingredients
2 cups fresh peas
1/2 cup chopped fresh mint
1/4 cup sliced green onions
1/4 cup crumbled feta cheese
2 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
Salt and pepper to taste
Instructions
1. Blanch the fresh peas by boiling them in salted water for 2 minutes, then immediately transfer them to an ice bath to cool.
2. In a large bowl, combine the cooled peas with chopped mint, green onions, and crumbled feta cheese.
3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper to create the dressing.
4. Pour the dressing over the pea mixture and gently toss to combine.
5. Adjust seasoning with additional salt and pepper if needed.
6. Serve chilled or at room temperature.
Storage
Store the salad in an airtight container in the refrigerator for up to 3 days.
