Ingredients

1 tablespoon olive oil
1 clove garlic, minced
1/2 cup onion, diced
8 ounces fresh mushrooms, sliced
4 cups fresh spinach, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme, chopped
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 sheet puff pastry, thawed
Flour, for dusting
1 egg, beaten

Instructions

1. Preheat the oven to 400°F (200°C).
2. In a large skillet, heat the olive oil over medium heat.
3. Add garlic and onion, sauté until onion is translucent, about 5 minutes.
4. Stir in the mushrooms, cook until softened, about 4 minutes.
5. Add spinach, salt, pepper, and thyme, cook until spinach is wilted.
6. In a bowl, mix ricotta and Parmesan cheese.
7. Roll out puff pastry on a floured surface to fit a tart pan.
8. Place pastry in pan, trim edges. Prick the base with a fork.
9. Spread cheese mixture over the base.
10. Top with the spinach and mushroom mixture.
11. Brush edges of pastry with beaten egg.
12. Bake for 20-25 minutes until golden brown.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for about 10 minutes or until warmed through.
