Spinach & Ricotta Cheese Stuffed Manicotti

Ingredients

16 manicotti shells
2 cups ricotta cheese
1 cup grated mozzarella cheese
1/2 cup grated parmesan cheese
1 egg
2 cups fresh spinach, chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups marinara sauce
1 tablespoon olive oil
Fresh basil leaves for garnish

Instructions

1. Preheat the oven to 375°F.
2. Cook manicotti shells according to package instructions, drain and set aside.
3. In a large bowl, mix ricotta, mozzarella, parmesan, egg, spinach, garlic, salt, and pepper until well combined.
4. Carefully stuff each manicotti shell with the cheese and spinach mixture.
5. Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish.
6. Arrange stuffed manicotti in a single layer in the dish.
7. Pour remaining marinara sauce over the manicotti and drizzle with olive oil.
8. Cover with foil and bake for 25 minutes.
9. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
10. Garnish with fresh basil leaves before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place in a preheated oven at 350°F for 15 minutes or until warm throughout.
