Ingredients

1 pound chorizo sausage
2 cans (10 oz each) Rotel tomatoes with green chilies
1 block (16 oz) Velveeta cheese, cubed
1 cup sharp cheddar cheese, shredded
1/2 cup cream cheese
1/4 cup chopped fresh cilantro
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Tortilla chips for serving

Instructions

1. In a large skillet, cook chorizo over medium-high heat until browned and fully cooked, about 8 minutes. Drain excess fat.
2. Reduce heat to medium, add Rotel tomatoes, and bring to a simmer.
3. Gradually add Velveeta cubes and cream cheese, stirring continuously until melted and smooth.
4. Stir in shredded cheddar cheese, cumin, smoked paprika, and garlic powder. Mix until all ingredients are well combined.
5. Remove from heat and mix in fresh cilantro.
6. Serve warm with tortilla chips.

Storage

Store leftover dip in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place dip in a microwave-safe bowl and microwave in 30-second intervals, stirring in between, until warm.
